It is a kitchen device that you use to set baked foods on when they are cooling. A wire rack design can either be a short simple device which you set on your counter or stove top, or it can be a multi level device on wheels, which you can roll around your kitchen. If you don't own a wire rack for cooling your baked goods, then you are really missing out an essential kitchen device. The space in between the wires and the rack elevation allows air flow to cool your baked goods from both the bottom and top, which in most cases will cool them much faster than if you were to use a cooling pad, which tends to collect heat towards the bottom of your baking dish, and takes much longer to bring to room temperature.
