The flat roasting rack is available in a couple of different designs, since not all roasting pans are shaped exactly the same. It is possible to purchase a rectangular rack that will fit into just about every roasting pan.
Without using a roast pan, the poultry or meat would boil in its own juices. Using a roasting rack is also a healthy way to prepare roasts as it allows the fat to drip off the poultry and meat and rest under the rack. This rack is reversible and stands at different heights above the bottom of the pan depending on which side you use.
