Wire steamer racks working principle

 

Wire steamer racks that fit in the wok may also be used for steaming and are especially good for braising and smoking. A round wire steamer rack is the most popular and useful one. Place wire steamer rack in wok and add water to 1 inch below rack. (Water should not touch rack.) Cover wok; bring water to a boil over high heat. Arrange ingredients on heatproof plate. Place plate on rack in wok. Cover wok and reduce heat to medium. Steam food as directed in recipe. Carefully remove plate from wok.

 

When using a wire steamer rack, make sure the wires are close enough together so the food does not slip through the openings. If the food is too small, try covering the steamer rack with aluminum foil and then punching small holes through it. Or, use a round wire cooling rack instead of a steamer rack.

 

Steamer racks are available in a variety of styles. The ones typically packaged with woks are round wire racks. If your wok didn't come with a steamer rack, you may purchase one separately. If you don't have a steamer rack you probably can make do with something you already have in your kitchen. For instance, a round wire cooling rack or a small metal colander make great replacements.
