Few things taste better with barbecued meat than grilled vegetables. Instructions
Preheat the grill on high heat.
Rinse the vegetables under running water. Trim the stem and root ends and remove husks, seeds and peels, as needed. Cut the vegetables into chunks and drizzle them with olive oil. Sprinkle them with salt and pepper. Toss the mixture to coat the pieces with oil.
Open the grill basket and spray the inside top and bottom surfaces with cooking oil spray. Spoon the vegetable mixture into the grill basket. Lock the hinges in the closed position.
Place the vegetable grilling basket directly on the grill over medium heat. After 5 to 7 minutes, flip the pan over and cook for 5 to 7 more minutes, or until the vegetables are brightly colored and slightly softened.
