Oven Rack Positions
Oven racks enable you to cook large amounts of food in your oven at one time. They also let you adjust the position of your food in the oven and therefore adjust the food's level of doneness. Oven racks can be tricky to position, clean and handle.
You'll find as you cook that most recipes stipulate on which oven rack the item of food should be cooked. This is to ensure even baking and to use hot spaces in the oven to get certain results. For example, use the top oven rack position if you are going to broil something. You can also use the top position if you are reheating food that you would like to develop a crust. The middle oven rack position is the default position and is normally used for cooking cakes evenly. Use the bottom rack for cooking pizzas or pies to help them develop a crisp bottom crust. When you are cooking multiple pans of food, put them in the top middle and bottom middle positions and rotate them halfway through baking to ensure they are cooked properly. Always follow your recipe's instructions.
