How do I BBQ Whole Salmon
Salmon is the ideal fish for the grill because it tastes great and is large enough to serve a lot of people. Many people may think that salmon is difficult to barbecue because it tends to fall apart while flipping, but a well-oiled grill rack usually solves this problem. There are many seasonings that complement the flavor of salmon, so feel free to create your own blend of herbs and spices. Leftover barbecue salmon can be used to make salmon cakes, fish tacos and even cold salmon salad sandwiches.
Instructions
1 Choose the freshest whole salmon available when you shop for fish. Check the color and smell of the fish for freshness. Make sure you buy a fish large enough to serve all of your guests.
2 Remove the fins from the fish if your butcher hasn't done this for you, but leave the tail on. If you're using a fresh-caught fish, you will have to remove the head, entrails and fins.
3 Brush the inside of the salmon with melted butter or canola oil, then pack it with your choice of spices and fresh herbs. Some ingredients to try include fresh lemon, onion, garlic, black pepper, dill, sage, thyme, rosemary, tarragon and chili pepper.
4 Clean your grill surface, then coat it with a generous amount of vegetable or canola oil to prevent the skin from sticking. Brush the entire outside of the salmon with vegetable or canola oil.
5 Place the whole salmon on the hot grill rack, close the lid and let the fish cook for five to seven minutes.
6 Flip the salmon using a large spatula and cook covered for an additional five minutes. Brush with additional oil if necessary.
7 Remove the salmon from the grill and place on a serving platter. Remove the inside ingredients and serve immediately for the best flavor.
