Roasting racks almost guarantee that your foods emerge from the oven with crispy, well-browned exteriors on all four sides. By allowing meats to roast while not in contact with the greasy pan drippings, roasting racks also help you eliminate unwanted extra calories from your dishes.

Find a V-neck shaped roasting rack. This particular shape holds foods snugly in place while flat roasting racks don't hold the food securely.

Prefer a roasting rack with a non-stick coating. Otherwise, you'll find it almost impossible to dislodge food particles that get stuck on the rack during roasting. Non-stick racks also eliminate the need to apply cooking spray before roasting.

Consider the size roasting rack most suited to your everyday needs. Plan to buy one no smaller than 16 x 12 inches. This standard size is enough to hold two chickens at once and easily accommodates a 15-lb. Thanksgiving turkey.

Choose a model displaying a clear V-shape rather than just a partial curve. A pointed "V" shape allows enough room on both sides of the underlying pan to place vegetables that roast alongside the meat. It also raises the food to the right height so that the oven's heat circulates under the roast.

Make sure the roasting rack has handles. Handles should protrude far enough off the rack so that your hands, covered with oven gloves, don't touch the food when you grip the handles. The best racks have handles on their long sides.
